Ingredients for making millet rubber

To make millet rubbery, one will basically need 1 cup of millet flour, 2-3 cups of buttermilk or whey, 2 cups of water, salt to taste, and 1 tablespoon of ghee. While iron and steel utensils are sufficient, preparing it in an earthen pot or vessel enhances its taste.

How to make

Mangidevi, an elderly woman who specializes in making bajra rabri, explains the process. First, dry-fry millet flour in a pan for five to seven minutes on low heat. This removes the rawness of the dough, gives a light aroma. After that, buttermilk and water should be mixed in a vessel. Then add roasted millet flour and mix well so that there is no lump.

After that, the mixture should be kept on low flame for cooking. It should be stirred constantly to prevent it from sticking to the bottom. It should be cooked till thick. After cooking add salt to taste and mix well.

After that, heat ghee in a small pan and add cumin or garlic masala to it. Then this mixture should be poured over the prepared rubber. This completes the preparation of hot and flavorful rubbery. This dish is not only traditional and healthy but also incredibly delicious.
