While Christmas Leftovers make great bubble and sizzle and turkey curry, sometimes what you have the energy to muster is really good. Sandwich.
This version is pan fried and dipped in gravy.
Stuffed Leftover Christmas Toasties

Preparation time: 5 minutes | Cooking time: 10 minutes
Ingredients:
2 slices of sourdough bread
2 tablespoons of mayonnaise
1 tablespoon Dijon mustard
70 grams leftover turkey
Pinch of Maldon pepper sea salt
Black pepper
Leftover filling
Pigs surviving in blankets
50 grams of chopped brie
1 tablespoon cranberry sauce
A knob of butter
Cornichons and cocktail sticks
Hot gravy for dipping, optional.
method:
1. Start by assembling your toasted sandwich. Take each slice of sourdough bread and spread the mayonnaise on the outside of each. Then spread a teaspoon of Dijon mustard on the filling, followed by the leftover turkey. This is a good point to season the toasties with a pinch of Maldon pepper sea salt and some black pepper.
2. Top it with the chopped leftovers and the pork in the blankets. Then top with brie slices. Finally finish with a generous amount of cranberry sauce then sandwich the top slice of bread on top.
3. Place a heavy bottom pan over medium heat and add a knob of butter. When melted, add your sandwich, then use a heavy weight to press it down. Let it cook for about three to five minutes on one side before lifting the weight and carefully flipping the sandwich. The other side should be golden and crispy on the bottom. Add the weight again and cook the other side at the same time.
4. As soon as the toastie is done, remove it from the pan and cut it in half. The cheese should be oozy, and you can serve it topped with a cornichon and cocktail sticks. It is served hot with leftover gravy for dunking.
