1. Prepare the gravy.
Heat a little ghee in a pan and fry the chopped onions until golden. Add tomatoes, a pinch of turmeric, podi masala, dry coriander, salt and a splash of water. Mix it all and switch off the flame.
2. Layer it up.
Take a banana leaf, smear with it. Gheeand spread a layer of onion tomato gravy in the middle. Pour the idli batter over the gravy and sprinkle some podi masala for that extra punch.
3. Steam it to perfection.
Cover the pan with a lid and let the idli steam till it is cooked. Once done, serve it hot and enjoy the flavors!
