Bruschetta With Burrata, Brussels Sprouts, & Pancetta

It’s been a long winter, although reasonably mild, so I shouldn’t complain, I’m really looking forward to spring. During the holidays I was so busy cooking for the family that I never had time to stop and take a picture. I created several new appetizers and snacks for my family that got rave reviews, including this flavorful bruschetta.

I’m a big fan of bruschetta because it’s always an easy, quick breakfast or appetizer. If I want to make a typical midweek meal more memorable, I’ll often add a simple appetizer to the menu. Bruschetta is also an easy treat to serve to unexpected guests who stop by for a glass of wine or to serve to a large group at a gathering.

You can top bruschetta with an unlimited number of toppings, from a simple drizzle of amazing extra virgin olive oil to a multi-ingredient topping like this one. I assembled this appetizer after having some leftover roasted Brussels sprouts from dinner and some creamy burrata cheese in my fridge.

Our local grocery store has a large selection of delicious Italian cheeses, including buffalo mozzarella and a readily available selection of burrata. Instead of burrata, you can also use standard fresh mozzarella or creamy goat cheese if not available in your area.

After topping my slices of toasted bread with sliced burrata, then slices of Brussels sprouts, I finished the bruschetta with some chopped hazelnuts, some chopped black pepper and a drizzle of chestnut honey. This is a full-flavored, uniquely flavored bruschetta that everyone enjoys.

Bon appetit!
