When Anna Garten Drops a video. Outlining “the easiest dinner she knows how to make,” it’s a case of not having to run to the nearest grocery store to get the necessary ingredients. Luckily, this recipe that I and nearly five million others have seen on Instagram only requires three ingredients: chicken breast, goat cheese, and fresh basil.

I probably make roasted chicken breast at least once a week because it’s one of the only proteins that the whole family can agree on. That said, I usually keep it pretty simple, roasting it in a hurry, with nothing more than salt, pepper and olive oil for ease.

Anna’s simple tip of adding a little goat cheese and basil offers a big return on investment and I’m so glad I made my lineup. I have a new go-to Saturday dinner. Also, while my kids aren’t the biggest fans of goat cheese, they lapped it up. The cheese adds a really pleasant earthiness. The taste is not overpowering. Even those who swear they don’t like goat cheese (how could that be?!) will love this dish.

Anna’s easiest dinner recipe ever

Like many of Anna’s favorite recipes, this chicken dish is anything but simple. You loosen the skin on the chicken breast and make a nice little pocket to put some flavorful ingredients in. Next, you fill said pocket with goat cheese slices and fresh basil. To finish the preparation, you spread the chicken skin over the filling, and drizzle it with a little olive oil and salt and pepper.

Roast stuffed chicken breasts in a 375°F oven—this is where the magic happens. The fat and skin of the goat cheese infuses the chicken itself while the basil infuses the meat with herbs, ensuring that every bite is full of flavor and moisture.

Anna suggests taking the chicken out of the oven when slightly undercooked to prevent it from drying out. Then, during the 10 minute rest, the chicken will finish cooking, resulting in a perfectly cooked, moist and flavorful chicken breast. Just make sure the chicken reaches 165°F.

Why I Love Anna’s Goat Paneer Chicken

While most of Anna’s recipes are genius, and her cooking prowess A good chicken knows no boundarieswhat really makes this recipe stand out is the simplicity. It took a full 10 minutes to prepare, and I love that you get all the flavor of stuffed chicken without the need for butchery skills.

Using chicken skin to stuff the goat cheese and herbs was super quick and easy, and ensured the meat stayed nice and juicy. Anna suggests using boneless chicken breasts, which cook in just 35 to 40 minutes. I had skin-on-the-bone breasts that worked beautifully, but needed about 15 minutes more in the oven. I served the chicken with roasted potatoes and asparagus, which made for an early spring dinner.

Now that I’ve tried the original version, I’m looking forward to trying different variations. I’m talking feta, sun-dried tomatoes, and fresh oregano, or a spreadable cheese (like Boursin) with lemon wedges and parsley. How easy is it?
