It is quick to prepare and can be stored for up to two days. The best part? You don’t need a lot of ingredients to make this authentic Maharashtrian delicacy. Here’s how you can prepare Kolha Puri Thatcha at home.

Ingredients:

Green Chillies: 100 gms

• Garlic cloves: 15-20

Roasted peanuts (without skin): 50 grams

• Cumin: 1 teaspoon

Salt: As per taste

• Oil: 2-3 tbsp

Method of preparation:

1. Prepare the chilies:

Wash and dry the green chillies thoroughly, then remove the stems and cut into three pieces. You can choose either spicy or mild chilies depending on your preference.

2. Cook the ingredients:

Heat oil in a pan and add cumin seeds. Once they start to crackle, add the garlic cloves and fry. Before the garlic turns golden brown, add the chopped green chilies and cook on medium heat for 3 to 4 minutes until they soften slightly.

3. Add peanuts:

Once the chillies start to soften, add the roasted peanuts and cook for another 1-2 minutes. Reduce the heat, add salt, and cook without covering the pan.

4. Cool and grind:

Switch off the flame and allow the mixture to cool slightly. After cooling, grind it coarsely using a traditional mortar and pestle or silbata. If neither is available, pulse the mixture in a blender for 4-5 seconds to achieve a coarse texture.

Your Kolhapuri Thatcha is ready to serve! Pair it with any meal to add flavor.
