Mix the braised egg noodles with chopsticks

Recipe Instructions

First, prepare the sauce mixture. Combine sweet bean sauce, spicy bean sauce, rice vinegar, Shaoxing wine, dark soy sauce, and water. Have all your ingredients ready before you start cooking.

Preheat your wok over medium-high heat until it starts to smoke lightly and add 2 tablespoons of oil. Then immediately add the beaten eggs. Saute them until they’re done (they should still be slightly runny), and quickly remove from the pan.

Add the remaining tablespoon of oil to the skillet (still over medium heat), along with the tomatoes, peppers (if using), garlic, and zucchini. Cook for a few minutes until the tomatoes are soft and the zucchini is tender.

Add the prepared chutney mixture to the wok with the eggs.

Stir, cover, and reduce heat to medium. Simmer on medium heat for 3-5 minutes. Add salt to taste and stir in sesame oil.

Serve this mixture over your cooked noodles (alternatively, you can serve it over rice).

Garnish with chopped scallions, and serve these braised eggs immediately with noodles!
