Spiced rum slips into a hot cup of coffee. Jamaican Bobsled Team Sliding down an icy track…that’s to say, more easily than Irish whiskey. Its spicy flavor and sugarcane sweetness offset the roasted, bitter bite of coffee. On top, a heaping dollop of butterscotch whipped cream, a little splash of the rum, caramel and dairy flavors of classic rum raisin ice cream. To finish, a little fresh nutmeg grated on top drives those spicy notes.
My only challenge was making the butterscotch whipped cream. Thank God I work. Everything’s Good (Spiced Rum Coffee with Butterscotch Whipped Cream) Recipe

- 3/4 Cup (175 ml) Heavy cream
- 1 1/2 tablespoons (10Yes) Mixed milk powdersuch as carnations
- 1 1/2 tablespoons (15Yes) Dark brown sugar
- small pinch Kosher salt
- 6 Ounce (175 mL) warm Black coffee
- 2 Ounce (60 ml) Spiced rum
- 1 Tablespoon (15 ml) 2:1 simple syrup (see note)
- Freshly chopped nutmegFor garnish (optional)

In a mixing bowl or the bowl of a stand mixer, combine the heavy cream, malted milk powder, brown sugar and salt. Using a whisk attachment, electric beater, or whisk, beat until the dry ingredients are evenly incorporated and the cream forms soft peaks. Take shape.

Add hot coffee, spiced rum and simple syrup to a preheated mug. (You can preheat it by adding hot water, letting it steep for 1 minute, then draining.) Using a spoon, pour dollops of whipped cream over the coffee and, if using, Top with freshly chopped nutmeg. Serve immediately. (You may have more whipped cream than the mug; feel free to add more as you drink, or use some for the next round.)
Notes
To make a 2:1 simple syrup, combine 1/2 cup (120 grams) of granulated sugar with 1/4 cup (60 mL) of water in a small saucepan. Heat over medium heat, stirring, until sugar is completely dissolved. You can add syrup hot, because the drink is hot; Any extra can be stored in the refrigerator for up to three months, and often longer.
