Marriott Bonvoy’s Masters of ‘The Power Play’ brings together some of India’s most brilliant female chefs for a special gourmet experience celebrating women’s empowerment and culinary excellence. Among them was Chef Pooja Dhingra of Le15 Patisserie, who delighted guests with her French-inspired desserts, such as indulgent rosé and mixed berries tres leches. In this exclusive chat with News18.com, Chef Dhingra talks about his passion for regional flavors, how to add luxury to sweets, and the unique camaraderie of this innovative culinary event.

How did you elevate the power play with your beautiful creations and add luxury to the experience?

When I was invited by Culinary Culture and Masters of Marriott Bonvoy to be a part of The Power Play, I knew I had to bring my A-game. Since its inception, Masters of Marriott Bonvoy has showcased the best culinary talent from around the world, and as a pastry chef, I wanted to create a dessert that was not only delicious but also complemented the other courses. . I am delighted with the audience response to the Rose and Mixed Berries tres leches from all the dining guests. Powerplay was a one-of-a-kind experience, and I’m proud to have been a part of it, cooking with some amazing chefs who have now become close friends.

How are regional flavors and seasonal ingredients shaping culinary experiences in India?

As a chef, I strongly believe that regional flavors and seasonal ingredients are the backbone of Indian cuisine. Our country is blessed with an incredible diversity of ingredients, and as chefs it is our responsibility to showcase them in all their glory. We make many things that are inspired by local flavors and ingredients. Pan macarons, tea-spiced hot chocolate, and fennel and sugar cookies are staples on our menu. It’s an exciting time for Indian cuisine, and I’m thrilled to be a part of this culinary revolution.

What was the most exciting aspect of participating in Powerplay with such a diverse group of chefs, each with their own unique culinary skills?

Participating in Powerplay and collaborating with some chefs I respect will go down as one of the highlights of my culinary journey. Being surrounded by such a diverse group of talented chefs, each with their own unique skills, was truly inspiring. The camaraderie, creativity, and shared passion for food created an electric atmosphere throughout the event. I loved seeing how each chef brought their own perspective to the table, and I must say I learned something new from each of them. Powerplay was more than just a culinary program. It was a celebration of food, friendship, and creativity — living up to the Masters of Marriott Bonvoy experience. I am grateful to the amazing team at Culinary Culture, Masters of Marriott Bonvoy, and The Ritz-Carlton for making this incredible experience possible for all of us.
