Don’t get me wrong, I do love Meat But there are some days when it feels a little too heavy to eat, and there are days when I just don’t want to bother cooking it. Those days happen at least once or twice a week, so I find myself often looking for easy vegetarian recipes. During the winter months, I gravitate toward nourishing Indian and Thai curries that warm me from the inside, but I also crave pizza and veggie burgers from time to time.
